Recognizing the unmet need for a wider variety of high quality foods at festivals and fairs, Anthony persuaded a major meat packaging company to produce his family recipe for Italian Sausage and to build food concession stands to sell its products. With that began the 75+ year history of the food concession and catering operation that bears the name of its founder and that has become synonymous with high quality and great taste. Anthony always stressed quality and service, which would become the hallmark of the Santillo Sausage brand and the basis for his expansion of food concession operations throughout the eastern United States.
During the time that Anthony took off from the food concession business to serve his country during WWII, he left the operation of his business to his wife Josephine and children Louis, Shirley, Anthony Jr., Frances, and Samuel.
Today, the tradition of providing high quality food products and great service is being carried on by the third generation of the Santillo family.
